Island Thyme Jerk Potato Salad

This classic island seasoning of thyme, chipotle, garlic, allspice and cinnamon isn't reserved for chicken.

3 pounds new potatoes, rinsed

2 fennel bulbs, thinly sliced

1 ½ teaspoons Island Thyme Jerk

1 medium onion, chopped

1 ¼ cups mayonnaise

Fresh chopped parsley

Steam or boil potatoes until fork tender but still firm; drain. Combine the onion, fennel, mayonnaise and jerk seasoning in a large bowl. Add the potatoes and mix just to combine. Garnish with fresh parsley. Serve warm or cold.
